Ingredients

• 30 g freeze-dried blueberries
• 3 cups rolled oats
• 1 cup walnuts, chopped
• ½ cup almonds, chopped
• ⅓ cup pumpkin seeds
• ¼ cup maple syrup
• ¼ cup coconut oil or melted butter
• 1 tsp vanilla
• 1 tsp cinnamon
• ½ tsp salt

Method

  1. Heat oven to 165°C. Line a tray.

  2. Combine oats, nuts and seeds.

  3. Stir vanilla into maple syrup and oil, then mix with the dry ingredients. Add cinnamon and salt.

  4. Spread evenly and bake 25–30 minutes, stirring once halfway.

  5. Remove from the oven and fold in blueberries.

  6. Cool completely, then break into clusters.

Notes

• Adding the fruit after baking preserves its crisp texture.
