Ingredients
• 20 g freeze-dried blueberries
• ¼ cup chia seeds
• 1½ cups milk
• 2 tbsp maple syrup or honey
• 1 tsp vanilla
• Pinch of salt
For the blueberry layer
• 10 g freeze-dried blueberries, powdered
• 2 tbsp milk
• 1 tbsp maple syrup
For topping (optional)
• Freeze-dried blueberries
• Fresh blueberries
• Granola
• Coconut flakes
• Mint
Method

Stir chia seeds, milk, syrup, vanilla and salt. Mix in the blueberries.

Chill at least 4 hours.

Combine layer ingredients until smooth.

Spoon pudding and blueberry mixture into glasses and finish with toppings.
Notes
• Freeze-dried fruit colours and thickens the pudding naturally as it hydrates.
