Ingredients

• 25 g freeze-dried strawberries
• 3 large bananas, frozen
• ¼ cup cashews, soaked
• 3 tbsp Greek yogurt or coconut cream
• 1 tsp vanilla
• 1 tsp lemon juice
• Maple syrup, to taste

For topping (optional)
• Crushed cookies
• Freeze-dried strawberries
• Fresh strawberries

Method

  1. Blend bananas, cashews, yogurt, vanilla and lemon juice until completely smooth.

  2. Sweeten to taste.

  3. Add strawberries and pulse briefly to create swirls.

  4. Serve immediately with toppings.

Notes

• Brief pulsing keeps ribbons of bright strawberry flavour.
