Ingredients – Pancakes
• 2 cups all-purpose flour
• 2 tbsp sugar
• 2 tsp baking powder
• ½ tsp baking soda
• ½ tsp salt
• 2 cups buttermilk
• 2 eggs
• 4 tbsp butter, melted
• 1 tsp vanilla
Ingredients – Compote
• 25 g freeze-dried strawberries
• ½ cup water
• 2 tbsp honey or maple syrup
• ½ tsp lemon juice
For topping (optional)
• Whipped cream
• Freeze-dried strawberries
Method

Simmer compote ingredients about 5 minutes until lightly thickened. Keep warm.

Whisk dry pancake ingredients.

Whisk buttermilk, eggs, butter and vanilla.

Combine gently.

Cook ¼ cup batter per pancake on a lightly greased pan until golden on both sides.

Serve with compote and toppings.
Notes
• Freeze-dried fruit creates an intensely flavoured sauce in minutes.
