Ingredients
• 6 g freeze-dried strawberries
• ½ cup rolled oats
• 3 tbsp sliced almonds
• 1 tbsp + 2 tsp cashew pieces
• 1 tbsp sunflower seeds
• 1 tbsp + 1 tsp honey
• 1 tbsp coconut oil, melted
• ½ tsp vanilla extract
• Pinch of vanilla bean powder
• Pinch of salt
Method

Heat oven to 165°C. Line a small tray.

Combine oats, almonds, cashews and sunflower seeds.

Stir vanilla into the honey and coconut oil, then mix with the dry ingredients. Add salt.

Spread evenly and bake 15–18 minutes, stirring once halfway.

Remove from the oven and fold in strawberries.

Cool completely, then break into clusters.
Notes
• Adding the fruit after baking keeps it crisp and bright.
