Time: 15 min + chilling  Serves: 4

Ingredients – Panna Cotta

• 2 cups heavy cream
• ¼ cup sugar
• 1 vanilla bean or 2 tsp vanilla extract
• 2 tsp powdered gelatin
• 2 tbsp cold water

Ingredients – Coulis

• 25 g freeze-dried raspberries
• ⅓ cup water
• 3 tbsp sugar
• 1 tsp lemon juice

For topping (optional)
• Freeze-dried raspberries
• Fresh raspberries
• Mint
• Lemon zest

Method

  1. Bloom gelatin in cold water, 5 minutes.

  2. Heat cream, sugar and vanilla until dissolved.

  3. Remove from heat and stir in gelatin.

  4. Pour into glasses and chill at least 4 hours.

  5. Simmer coulis ingredients 5–7 minutes until slightly thickened. Cool.

  6. Spoon over the set panna cotta and finish with toppings.

Notes

• Freeze-dried raspberries create an intensely flavoured sauce with minimal cooking.
